This fabulous winery, not far from Bury St Edmunds in Suffolk, was established in 1988. The Carlisle family really set out to plan more unusual varieties at their vineyard, and the results have been so impressive. Sonata is a lovely wine, made from a blend of Madeleine Angevine, a Loire Valley grape, and the German grape, Bacchus - itself a cross between Riesling and Sylvaner. It produces lovely laid back citrus notes, granny smith apples and nice minerality, that make it a great wine to pair with textured fish. 13% ABV
